Ingredients
Sweetened saba bananas
Sweetened red mung beans
Sweetened white beans
½ cup gulaman cubes or sago
¼ cup sweetened red mung beans
¼ cup sweetened white beans
½ cup UFC Coconut Gel (Nata De Coco), drained well
½ cup UFC Sugar Palm Fruit (Kaong), drained well
½ cup sweetened saba bananas
½ cup sweetened jackfruit strips
¼ cup Barrio Fiesta Macapuno String
½ cup ube halyaya
shaved ice
1 cup evaporated milk
1 cup leche flan
4 scoops ice cream (mango, ube, or vanilla)
¼ cup pinipig
Step 1: Prepare
Prepare the gulaman according to package directions. Use less water than called for to yield a firmer texture
Step 2: Layer
In a tall glass, add about a teaspoon each of desired add-ins to about ⅓ full and pack the glass around the layers with shaved ice.
Step 3: Drizzle
Drizzle evaporated milk over the ice and top the ice with leche flan and 1 scoop of ice cream flavor choice.
Step 4: Garnish
Garnish with strips of macapuno and sprinkle with pinipig, if desired. Serve immediately.
