Ingredients

  • 1 tbsp vegetable oil

  • 1 lb Ground Pork

  • 1/2 cup chopped white onion

  • 2 cloves garlic, minced

  • 1/2 cup chopped carrots, fine

  • 1/2 cup chopped scallions

  • 1/2 cup thinly sliced green cabbage

  • 2 tbsp chopped fresh cilantro (optional)

  • 1 tsp fine kosher salt

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • 1 tsp soy sauce

  • 30 Wei Chuan Spring Roll lumpia wrappers

  • Vegetable oil for frying

Step 1: Let’s Get Started

Heat the tbsp of vegetable oil in a large skillet over high heat. Add ground pork and cook through until crumbling and no visible pink, approximately 7 minutes. Remove pork from skillet and set aside. Drain most of the grease leaving a small amount to cook vegetables.

Step 2: Sautee the veggies

Add the white onion and minced garlic, stirring until fragrant. Stir in carrots, scallions, cabbage, and cilantro (optional) for 1 minute. Add pork and season with pepper, salt, garlic powder, and soy sauce. Stir and cook for 1 minute until flavors mix. Remove from heat and allow to cool.

Step 3: Prepare the lumpia wrappers

Unroll and lay lumpia wrapper flat. Place heaping tablespoons of filling across one end of wrapper, leaving 1 inch space at top and both ends. Fold the short end over the filling, tuck both ends over the filling and roll tightly. With 1 inch remaining, moisten the end of wrapper to seal the edge. Set aside on plate. Repeat until all rolls are wrapped.

Step 4: Heat the oil

Heat 1/2 inch vegetable oil in frying pan over medium heat.

Step 5: Fry the rolls

Place 4 lumpia into the hot oil being careful to place with the seam facing down. Fry approximately 1 to 2 minutes, turning occasionally until all sides are brown.

Step 6: Let rolls drain and crisp up

Place on paper towel to cool and keep crispness. Repeat to fry all remaining lumpia and serve immediately with Chili Sweet Sauce!

Enjoy!
